  1. In a heavy-bottomed brass or steel pot, bring the milk to a boil.
  2. Add the soaked rice. Lower the flame and simmer, stirring frequently, until the rice is completely cooked and the milk has thickened beautifully.
  3. Crucial Step: Turn off the heat completely and let the kheer cool for 5 minutes. Stirring jaggery into boiling milk will cause it to curdle.
  4. Gently stir in the grated jaggery until melted. Offer to Chhathi Maiya warmly.
